Steak au Poivre

French classic in pie form. Also known as steak in pepper sauce to those who don't speak french. 

Good big chunky bits of chuck steak. Real creamy, rich, au poivre style sauce made with beef demi glace, red wine, cognac, lots of cream and shit load of the best possible pepper mix. Please enjoy. 

We really did go overboard on the pepper here and spent way too much time and money finding the best possible pepper mix for the pie. We settled on a mix of black, green and white dry, peppercorns, which we roast and grind up to just the right powdery texture with some little cracked lumps in there for texture. Then added in some really good brined green peppercorns that give a little pop in your mouth. If you order an au poivre pie it should taste of poivre!
